Carol Taylor, Principal Owner and General Manager

The Mill Café is Carol Taylor's signature. A career restaurateur, her attention to detail is evident with every visit. The staffing, the service standards, the décor, and the food detail, are all part of Carol's vision of what restaurant should strive to be. "I want the Mill Café be the best dining experience in the area... I am very proud of our service excellence training and our great reviews." Carol's goals, her passion and work ethic have built a successful business with a solid reputation and a huge following of loyal customers.

Carol is equally passionate about her family. The youngest of five children, Carol was born in Meaford and raised on a family farm in neighboring St Vincent Township. Carol, her son Joe and daughter Jessie have a home in Clarksburg. Joe is apprenticing with a local contractor and Jessie is currently enrolled at Rinaldi College of Aesthetics in Barrie and working at the Mill Café.




Day Time Manager Diana Doyle

Diana first started in the food service industry at Talisman Resort. That is where she met her husband Michael in 1978. Together they have a twenty two year old daughter', Christine. Diana has worked at The Hampton House in Singhampton and spent many years at Sterio's in Thornbury. She also was Co-owner of The Picky Palate coffee shop in the mid 1990's. For the past twelve years Diana has been at The Mill Café, where she is currently day-time Manager.



Derek Crespy Bar Manager

Growing up on the slopes and shores of southern Georgian Bay, Derek returned to his roots after spending several years abroad. While gone Derek obtained a degree in political science from McMaster University, a degree in gemology from the Canadian Gemological Association, Master Diamond Grader credentials while studying at the prestigious HRD diamond school in Antwerp, Belgium, and countless tales from his international travels.

With nearly a decade of working experience in the service industry, you may recognize Derek from the bars of local hotspots and private clubs. In late 2006 Derek began working at the Mill Café, where his passion for wine and love of mixology has been given a chance to further evolve and manifest itself. Derek has tailored the Mill Café’s wine list, fine spirits selection, and cocktail menu to complement the restaurants upscale dining experience. Having a love of the classics, as well as the latest trends, Derek will provide a continually evolving wine and spirits selection to please the palates of Mill Café patrons.



Peter Butler
Behind the scenes at the Mill Café is co-owner, Peter Butler. Peter is a partner in several ventures including Albion Golf Cars in Thornbury, Toronto and Ponte Vedra Florida. Peter, his wife Catherine, daughter Sarah, son's Andrew and Thomas are long time Thornbury weekend residents, establishing a permanent residence in the summer of 2008. The Butlers are active members of the Georgian Peaks Club and The Georgian Bay Club.
